StingingVelvet: Deus Ex is a super classic that holds up well even today with the DX10 .exe mod and "new vision" textures or whatever. It has some random old school aspects but if you can play modern FPS/RPG hybrids I think you can play and enjoy Deus Ex. If you like that one, then try stuff like Thief and System Shock 2.
Deus Ex (1) and System Shock 2 are among my favorite games (all time). They've gotten a genre name: Immersive Sims (I don't know when somebody came up with that... 10 years ago or so?) It's a genre that consists of very few games though.
I consider Thief a different type of game; Stealth... or sneaking simulator :-P There's just less interaction with the environment.

Note: I consider them 'immersive' because of the very open gameplay and interaction combined with the narrative elements - not because they're played from a first person perspective.

I'd start with some of the classics that had a huge impact on gaming, like Doom/Quake, Ultima Underworld (released 1992), System Shock, Baldur's Gate (revived the withering RPG genre), Fallout and others.

For many there are enhanced versions/source ports available - you can try playing them "the way they were" for shits and giggles, but frankly, modern ports make things less painful - and the true experience can only be had on a blurry CRT anyway. ;-)
I'm going to cheat by mentioning Neverwinter Nights 2, which hails from late 2006 (cheat #1). The base campaign is decent but hardly mind-blowing - it's better if you're at least somewhat familiar with the Forgotten Realms setting, but even then it's fun rather than outright impressive - but it follows on to Mask of the Betrayer (2007, cheat #2) which is my favourite RPG experience right after Planescape: Torment.

Try Syberia and several other classic point and click adventures. Careful they can be addictive, the meetings are not helping.
