Roughly in order:
1. Age of Empires III
2. Rise of Nations
3. Warlords III: Darklords Rising
4. The Time Warp of Dr. Brain
5. Age of Empires II
6. Star Wars Episode 1: Racer
7. Hoyle Casino Empire
8. Carnivores (either the second or third game)
9. Drakan: Order of the Flame
10. Myth II: Soulblighter
Anything from #3 and below is subject to change, of course.

My list is much different than most of y'alls.
Also, my list is going to only include games that are possible on GOG because the developers already have games on GOG and/or make PC versions of these games and they are not owned by Platform holders - so no Blizzard, Nintendo, Sony or Microsoft games are on my list.
1. Ikaruga (I would take entire Treasure catalog if I could)
2. Pac-Man Championship Edition DX
3. Planet Coaster
4. Fire Pro Wrestling World
5. Disgaea 4 (I want the whole series and choosing between 4 and 5 is a really tough call)
6. Super Stardust HD (I would take the entire Housemarque catalog also)
7. Virtua Fighter IV: EVO (I know V is the most recent, but VF IV has the best single player modes in a fighter ever).
8. Dragon Quest VIII (I haven't played XI, yet, and I want that here, too, along with the whole series).
9. Lumines
10. Super Mega Baseball
