Possibilities:

Because they tried the veal.
To reference the Iron Throne in Simon R Green's Deathstalker series
The artists got lazy
It was "Wear Green" day at work

This is a known issue with BG. I'm not 100% sure of the cause, or even if it's non-intentional, but it's certainly to do with the lighting and rendering in that specific area.
