I am brand new to Baldur's Gate and before I begin playing the series I want to know a few things first.

I own both the classic and enhanced versions of Baldur's Gate, but I don't know if I should play the classic version with some patches and mods or the enhanced version.

I want to get the best possible experience, but at the same time I can't stand grammatical errors and blatant bugs, anything that will break immersion if I notice it.

I have no idea what mods to use if I decide to play the classic version, I do know of the majority of the mods themselves, but not exactly what each one does.

I don't want to use the trilogy mod, I really just want a polished vanilla game with some fixes applied.

Any help figuring this out is greatly appreciated!

I somewhat decided what I want to use with the classic version, but is DudleyFix any good? Should I use the Baldurdash Fixes and DudleyFix or just the Baldurdash Fixes by themselves? Also, what is the general consensus on this fix pack?

Do not use Baldurdash or Dudley Fix with the GOG version; they are not needed, and there are issues with using them, like the map transition for Ulgoth's Beard is broken. Just use that BGFixPack that you linked to. You could also download Unfinished Business and selectively choose just the 'Elven Charm and Sleep Racial Resistance' fix at setup, since that is broken in BG1.
