nightcraw1er.488: Offline installers via web browser every time. Also, think up front how you will:
A) organise the storage
B) collect information on what is there
I don’t use gogrepo as it doesn’t fit my setup, and I want my setup to cover all items, not just gog. So I have:
[series][subseries][game name] [year][platform]
The. Subfolders for type, e.g store, rob etc., subfolders for documents, save, mods, patches etc.
In this way I consistently store everything in a way I can automate checking and moving.
Then there is what is there. A lot will use excel with a sheet with all metadata on.
Each to their own of course, and it's down to what you feel most comfortable with, what you can get your head around etc. A) organise the storage

I like to use my GUI's with either gogrepo.py or newer gogcli.exe, as I build up a fairly useful and interactive to some degree database. It serves my needs to a point. Beyond that I use an Excel file, and Excel Macros (VBA) with GUIs to keep on top of all my games, no matter where they come from. Some elements of that are manually done of course.
I download my GOG games to a large external drive that I use for all my regular downloads, not just games. But most of the games get relocated to other drives and duplicated on yet other ones. I keep a couple of extra backups of my regular downloads on separate physical drives as well. I learnt very early in my PC life how easily digital data can be lost. A real tragedy if important documents and photos especially, if you only had one backup.
