I'm not sure how well can the old Doom games play out of the box with a gamepad, but you'll have better luck if you run with a source port, like GZDoom.

One stick for movement, other for looking (left right only, no need for up/down), one trigger to shoot, other trigger to use, shoulder buttons for previous/next weapon. Home button for escape. What am I missing?
If you could only play old Doom games with gamepad, I would be mightily disappointed. Chances are you have to use keyboard and mouse.

if playing direct from GOG: Fugga' bout a controller or wasd controls. This is old school controls. If using a source port: probably unlikely to be supported as you need the num keys to swap weapons.

Mapping those keys in game, I think. You might be able to use some 3rd party software to get it working, but will the game natively support binding the gamepad? I doubt it. Interestingly enough, the way the question is asked makes it sound like the gamepad is the default option and the OP wonders if keyboard/mouse is even possible.

Oh no, I wasn't saying it would be tough to play Doom in a gamepad (there are already console versions of Doom, even a GBA one). I'm just not sure if Doom's setup file is included in the GOG version, or whether it would recognize one of the newer gamepads.

Eh, DosBox key mapper? Doesn't that support using the gamepad as input?

See above.

No idea. I don't use gamepads and therefore never look for those options. I have a terrible case of tunnel vision
