I own all the 3 games you mentioned and only CrossCode is the one out of date. Sudden Strike 4 is at v1.11
Shadow Tactics at 2.2.10.f
Currently the ones I know that are out of date are:
Signal From Tolva (Lin 1.62, Win 1.65)
CrossCode (Lin 1.0, Win 1.07)
Don't Starve (Lin Prehistoric (2017), Win fairly latest)
Dreamfall Chapters (Latest patch not available on Linux yet)

In GOG's defense, they're not always to blame. Some devs (such as Klei Entertainment) don't put much effort in GOG releases. Overall I'd say most of the games are up to date as I tend to keep an eye on all the ones I own, I often email devs asking why the GOG release is outdated, sometimes they say they have an issue with uploading to GOG (which is strange considering how many other devs push Linux updates successfully), while others give cryptic replies, possibly due to NDA.
