Unsurprisingly, my #2 option is Civilization 2.
TIME WARRIORS

It's a fighting game with an unique style and awesome music. Nobody seems to know this game, that makes me sad. It doesn't deserve to be forgotten. Much fun and really unique unlike any other fighting game. Please vote for it in the community wishlist!!
Might & Magic X: Legacy....reviews paint it as lukewarm, but i still wanna play it.

Apart from the stock-standard Bethesda games that always get mentioned:

* The Lord of the Rings: Battle for Middle Earth

* Millenia: Altered Destinies

The second one I had on disc years and years ago, but it was bugged I think. Such a neat premise! You get a time-traveling ship, and have to alter the development of several civilizations to get a specific world-state.

I'd love to get a crack at it now and see how it plays.
Mafia: The City of Lost Heaven, Chameleon and the Vietcong series would be nice..
I would like to see Wolfenstein: The New Order.
Before X-COM UFO, there was Omnitrend's Breach. You create a team and lead them through various scenarios, in space on land or wherever your imagination takes you. As the team members gain experience, they gain abilities and skills. The editor it came with gave it endless scenarios. had quite a following back in the day.
I'd like to add one more. As it'll probably never happen.

The PC port of Road Rash that had the kick ass soundtrack.

Considering I have about 40 games I want to see on GOG, I'd be very hard pressed to pick just one :P
