GR00T: I don't know much about the game's pawn system, but can't you just make your own? I mean, if other players are making them and you can use theirs, why can't you just make your own?
You can only create one pawn that will accompany you all the time. The other 2 have to be choosen from between random generated pawns and other players pawns.

To answer some of your questions:

1. The Pawn system and Ur Dragon both work exactly as in the Steam version.
2. The GOG Galaxy servers are separate from the Steam ones meaning that this is a fresh start.
(well, fresh-ish because a few of us here tested this game (THOROUGHLY) before the release today;) )

Hickory: Galaxy and Steam servers have NOTHING to do with multiplayer pawns and leaderboards. I repeat, those are controlled entirely by Capcom. Read that GOG reply again:
"The pawn system and Ur Dragon both work exactly as in the Steam version", meaning they are controlled by Capcom.
That is incorrect. Multiplayer aspect is also handled by Galaxy. What Paczyk meant was that the same functionality that is present in Steam build is also available in ours.

For other users' pawns - yes.
GOG version and Steam version have separate Pawn Pools.

Well, the offline installer files weigh in at a little over 19 GB and so does the version of the game you get when you install it via Galaxy.
