If your visa gift card can be used for international and/or internet purchases then it should work without a problem. However, many such cards are limited to physical POS (point of sale), but you can definitely try. As for the cardholder name, just input your name there - visa will recognize that this is a gift card and as long as it aproves the sale your GOG.com checkout will complete successfully :)
