Well, the meat is prepared pretty much the same and sliced the same. The difference between a kebab is that it's offered in a closed pita shell or a thick bread-like shell that's more open and you can eat it with a fork. The other difference is that there is more vegetable filler and you usually have three choices of sauce: mild, medium, and hot.
Gyros don't have as much filler veggies from what I recall and are almost always served one way: they look like a slightly thicker version of a wrap.
