I've downloaded enhanced version and it installs all languages without asking. What to do if I only need specific one for example polish and don't need other ones?

If you don't need the other ones, best thing to do is just not use them. I haven't heard of a way to avoid installing them in the first place.
If you want to remove a language once it's installed, though, look in your CookedPC folder for some files like en0.w2speech, de0.w2speech, etcetera. Those are the large language files that have the spoken bits in them, so you should be able to remove them if you're looking to free up some space. I tested that out and the language I removed stopped appearing as an option in the launcher (and the game still works), so that should work.
en0.w2speech should be English, pl0.w2speech should be Polish, etcetera.

It looks like a complete waste of bandwidth, we should be able to choose the languages we want to download :\
