I've done it with a Fighter/Thief.
I've done it with a Fighter/Mage/Thief.
I've done it with an Inquisitor.

I used Stoneskin/Mirror Image/Improved Haste and did the melee thing for all characters.

I want to play a pure caster, or caster/thief or caster/cleric type of hybrid, where combat involves all spells with just some utility if I do dual or multi - but I'd prefer just a solo class like Mage or Specialty, or Sorc?

What is the best solo spellcaster in the game?

I don't know much about spellcasting except for the spells that make you good at melee.

I've never done it, but from a number of threads/guides I've seen over the years, the common view seems to be for the Sorcerer as the easiest class to solo.
I agree to some extent, with one proviso: you must know your spells and plan your spellbook carefully as a Sorcerer. As ever, though, it's a matter of play style as to which is the 'best' -- I personally don't think 'best' is a definitive concept in this respect.
Sorcerer is easy for most of the game, but I never figured out how to get through the magic free zones of Watches Keep.
Take a sorcerer. Spontaneous casting is both powerful and fun.

The easiest way is to just run away. The worst part is that one of the dead magic zones leads right into a huge fight in another room, so you have no time to prep anything.

I've done a sorcerer through BG2+ToB, and you WILL be hitting things with weapons. There are enough magic-resistant and magic-immune monsters that you can't really avoid it. Some things like golems will be immune to most of your summons, too, which makes it even more annoying. But mostly, you can destroy everything with spells just fine. Skull Trap, Sunfire, and Horrid Wilting do great against hordes, and Animate Dead and Mordenkainen's Sword can help keep things at a distance.

I've also done a wildmage through BG2+ToB, and it's very fun as well. You get as many spells as a specialist mage but have no school restrictions. Nahal's Reckless Dweomer is also pretty amazing, since you can cast 7th-9th level spells from the beginning of the game so long as you can find a scroll to scribe. It leads to a somewhat more cautious approach than a sorcerer in terms of selecting daily spells, but it gets more overall versatility because you can learn EVERYTHING. And in the heat of the moment, if you didn't memorize the spell you need, Nahal is there for you. Of course, even with normal spells you don't always get the effects you want... but that's part of the fun. Also, once you get to level 25, the variable level of your spells is irrelevant, since spell effects are capped at level 20.
Nice. So - I don't know what spells I should get - I don't want to do a wild mage I think, sorcerer seems cool, but kinda cheese.

Is there a spell list? I don't know what most of the spells do since my main goal of BG2 was to stack as much save vs. spell (etc) and damage / attack per round and just tank things.

either that, or I'd run around a corner and restealth to kill the harder stuff. Haha
