First time Playing BG2 and I just Recruited Viconia, was just wondering how long until her first Romance Dialogue Triggers.

You can get it almost straight away.
You may not recognize it as a romance dialogue.

"So...what draws you to this part of Faerun? Amn? Athkatla? I seem to recall you mentioning something about a mission or some bother."

If you take her into your party immediately after rescuing her, the game sets a REAL TIME timer of 2 hours, meaning it takes a full 2 hours of our time, with the game running, for her to initiate her first conversation with you.

If you refuse so she leaves the area, then go talk to her where she tells you she's going, the game sets a GAME TIME timer of 1 day, which is in game hours and so takes only a few minutes of real time.

Edit: resting at Inns, etc. does not pass Real Time any faster. It's based on our time, not the game world's time.
