A long time ago, maybe even 15/20 years ago (I can't make up my mind), I played a demo on a demo collection CD or DVD where you impersonated a space engineer.

Set aboard a spaceship, togheter with other operational members or crew staff.
In first person view 3d videogame, you could move your hands and you had some items you could use on the structure of the ship.
It was possible to interact with the crew through a text menu, it was possible to talk about private things as well as matters of vital importance for solving problems on board.

I really can't remember the title and if it made to the shelf anyhow.

DoubleDuke: [Game Hunt] a really old first person space crew game
The description doesn't really ring a bell, but I'll throw in the three games that came to my mind first, anyway.

Struggling with the rotten new Mobygames UI, went through the Setting: Space station / spaceship group and Sentient seems to fit at a quick glance.
Also glanced at Rama, Frederik Pohl's Gateway and Starship Titanic, but seem unlikely.
As the previous user stated it's probably Sentient.

The other (less likely) option is Enemy Zero:
