Not needing an internet connection is the whole point of DRM-free. Some of the desktop icons for the offline installers might try to load Galaxy but you can go to the installation directory for each game that does it and run them from there. It would have been easy enough for you to check before asking by downloading a game, disconnecting from the internet, iand then running the game.

You don't, that's the point of DRM-free. Do note that it only applies for single player, multiplayer may often require a connection and/or Galaxy, not be available locally as well, depending on game.
However, there are a handful of exceptions for single player too, usually elements of games, see if you happen to have any of them at https://www.gog.com/forum/general/drm_on_gog_list_of_singleplayer_games_with_drm/post1

If you don't have an Internet connection, GOG Galaxy starts in offline mode. It doesn't prevent you from launching your installed games.

Don't worry, just run the games directly. It sounds like you installed the games through Galaxy and so the shortcuts are tied to Galaxy. I suggest you go into your games folder and make direct shortcuts to all of those games. While Galaxy has an offline mode, there's really no point in running it when you're offline. Better to bypass it and run the games directly.

Wow, I can hardly believe that in all this time... I never knew that. Thank you for sharing this!

Nope. I have installed games with an offline installer that I've never installed before and clicking on the desktop icon still tried to get me to log into Galaxy. In any case, games shouldn't be trying to use Galaxy unless I have Galaxy running. I don't have it starting at boot and I keep the services disabled.

GOG must have put something in the offline installers that checks to see if Galaxy is installed then. I know it does this in order to let Galaxy know the game is installed, which is fine, but I had no idea the offline installers created desktop shortcuts that launch Galaxy if Galaxy is installed. Damn.
It'll do it when I click the Launch button right after installing, too.

Edit: Weird. I just installed Get to the Orange Door for the first time, clicked Launch, and it tried to get me to log into Galaxy but the desktop shortcut loaded the game like it should have.

The rule should be that if you install a game through the offline installers, the desktop shortcut points directly to the game, if you install it through Galaxy the desktop shortcut opens Galaxy.

Yeah, the offline installer option to "Launch Game" will often try to launch from Galaxy rather than the standalone exe.
If you want to play with someone not in your close vicinity, then you'll have to tunnel LAN through internet, and to mirror local multiplayer games with something like Parsec.

Then there's some eyesores that are listed in the thread DRM on GOG: list of single-player games with DRM.

And if a game is not listed in here when they mention multiplayer in their game pages, chances are they have some form of online DRM, at least for multiplayer, often with the DRM going by the name of "Galaxy".
