I'm new to the site and I just wanted to know about buying a game.
I'm going to get Ice WindDale but I just wanted to know, will I get a download code for something like steam, or would it be the file itself, or would I get a physical disk.

You'll only get the digital version to download (DRM-free, not for Steam) but you'll have the right to continue downloading it as long as GOG is online. You can also back up the game by burning it to a DVD or copying it to an external hard drive/flash drive and run it from there without ever having to visit GOG again (if that's what you want).
