I am waiting for a particular game to go on sale, and when it does, I intend on buying multiple copies for me and for my friends.

The thing is, I don't know if some of them will be interested in the game, or I don't have their e-mails; can I purchase the game as a gift to my own e-mail and give them the game later, or is the key tied to the e-mail address provided?

You can't gift to yourself! The code would probably be invalid or unavailable for your account. If you have multiple keys, and no-one wants them, hold a giveaway on the forums!

You can most definitely purchase the game as a a gift and send the codes to your e-mail. You'll keep the codes if any of your friends isn't interested in the game and can gift/trade it later.

I've done it and I think I saw IAmSinistar saying he did it all the time a couple of hours ago.
Just to be clear, the key isn't tied to an email address.

All you need to redeem a game is an account and a code:

If you gift to your own email, you get a gift code that you can then redeem by yourself. Simple as that.

Also, props for the thread title, because taken literally it would seem you'd want to gift yourself to somebody else. You can do that to*.

Hm, using gift as an abbreviation of "send (a) gift to" might not have been the best idea, I concur.

As mentioned, you can email yourself. But also note that the key gets listed in "gifts" in your Games section, so you don't necessarily need to go to your email to get it; just copy/paste from the gifts section, and redeem here
