Hello, newbie here.
Today I was about to download a game (Magrunner: Dark Pulse) and the page asked me in what language would I download the game. Since I'm Italian but I love to play games in English, I would like to know if I can download the game more times but with different settings: in this case the language, but I hope soon to be able to download GNU/Linux versions of the games instead.
you can download any version, any game as much as you want.
Once you have a game on GOG you can download it as many times as you want, in as many languages as are supported and for all supported systems.

Magrunner has several language options but it is always the same installer as all the languages are included in the install. So you don't need to re-download it.

Concerning Linux: GOG does not support Linux yet but it was announced that they will start supporting Linux this year. At the moment GOG only supports Windows and Mac OS X but not every game has an OS X version. Magrunner for example only has Windows.

If there is a Linux version of Magrunner I guess GOG will be adding it once they start supporting Linux.

Be aware that some game installers may be multilingual, so downloading one language is the same as any other one. If the installer includes a two letter language code (_de_, _it_, _fr_ etc) then it is a language specific installer. If it doesn't, then it's either English installer, or multilingual one.
Another thing to be wary of is that some games, regardless of the settings, are still going to suck. :D
