I noticed that recently a lot of the installers changed, though without updating the version number or giving me an update notification. What's up with these new installers?

At least they said having removed some ads from the game installers, which were advertising games that can't be any longer bought from GOG. Maybe that's what you're referring to, unless you saw some real changes in the installer that were not just reported.
