I'm curious if current Windows only games will be eventually available for Mac? Games such as Planescape: Torment or Sanitarium right now are Windows only. Will they and others be on Mac at some point?

Thank you!

Why wait? Sanitarium works just fine in WINE on Mac OS X through Wineskin, with a little tweaking. Planescape: Torment works perfectly out of the box. I would also recommend installing a Windows partition with Bootcamp on your Mac hard-drive.

You can very conveniently dual-boot on either OS, and most games work out rather smooth (e.g. Planescape is smooth as silk) on Windows running on Mac HW though some games might not accept the exotic mix of HW and OS. Remember to update the drivers on your video card, though! Often this is an issue.

For some games (e.g. KOTOR) Aspyr (specialized in Mac versions) might be still the better shot.

I personally buy Mac when available upfront, nonetheless, as this signals to developers that Mac is a viable platform with a definite demand for PC gaming. Generally, possibly even the better one, as I did not observe such bloody portability issue ever between Mac OS versions, as there was with move to Windows 7!
