This sounds awesome by the way. I'm definitely going to try it. Unfortunately they didn't have any coriander (cilantro) at the supermarket where I was just out shopping, but I need to go to a different shop later anyway, so I'll look for it there. I'll report back on my results :-)

Take a look at this recipe as well - she uses Rotel canned tomato/chile combo but if your can't find Rotel, simply use another can of tomatoes and another fresh chile. But heres' the secret, keep trying different combinations until you get one you like but make sure you write down what each batch contains! One of these times it's bound to be your favorite and you'll kick yourself if you can't recreate it ;-p
