Fire Emblem: The Sacred Stones introduces summoners. Their cronies are pretty weak, but there you go. Path of Radiance includes a character who can call for reasonably useful reinforcements as well.

favorite build : some mage / ranger skills with summoners skills for the front line ;D

but the creatures or demon (later skill) have a limited time.
and don't forget arx fatalis! and also cooking in arx fatalis and you can kill those greedy f*cking shopkeepers too!

Either of the Magic and Mayhem games. Not sure where you would get these from nowadays though, maybe ebay.
Hmm. Not available on GoG, but Skyrim's conjuration magic can be progressed to the point of having a permanent summon. (You only have temporary ones to begin with, but the upper-end perks allow permanent dremora and/or undead summons/animations.)

Many/most turn-based strategy games (in the fantasy genre, at least) will have summonable units. Master of Magic is just one example.

Sacrifice (mentionned above too)

and Spellforce series (plently schools of magic have a summon ability)

i understand the fact of a permanent summon , but i don't know many games where there is such possibility , i know more games with a temporary summon. I never found those temporary creatures summoned an issue on the gameplay.

Torchlight games, you got a permanent pet. They're loot-based action RPGs.
I am think of Torchlight (as the Alchemist) and Nox (as the Conjurer), but if I remember correctly they are not permanent.
Can't remember whether there are some spells in Dungeon Siege that allow you to summon skeletons ans such, but then again even if there are such spells the summoned creatures are not permanent.

TwoHandedSword: Yep; heroes can be summoned, hired and/or freed from dungeons. The big advantage to summoning is not having to wait for that knock (and if you're into save scumming, the ability to reload for a more useful champion).
HoMM IV allows you to create and manage your hero similar to a traditional rpg. I believe there is a Summoner class as well as Necromancer. There are also other classes that have the same ability, beastmaster comes to mind. The Summoner was more of a Druid type, the giant Mantises were really nice and the Necromancer could create vampires from dead enemies. Great game IMO.

I know it's still in development and hasn't been released yet, but the gameplay pretty much revolves around you raising up an army of demonic undead from the remains of your foes as an alchemist-turned-necromancer. I am personally looking forward to its release (should be sometime this year).

Regarding games which are already available, Path of Exile allows you to build a summoning character by equipping certain skill gems, some of which give you permanent minions.

The ones in Torchlight are permanent, and I'm pretty sure the ones in Nox are too .

World of Warcraft :)
Blood & Magic is a D&D-based RTS that centers around summoning and converting units. Flawed but enjoyable, would like to see it on GOG.

Summoner 2 counts as well, though the summoning aspect is more direct. It is an almost entirely different game from Summoner otherwise, and frankly a superb gem that seems overlooked. It has an amazing degree of depth and richness to it, and is unfairly burdened with being perceived as a sequel when it really is its own game.
Why has nobody mentioned Eador yet? Both and [url=http://www.gog.com/game/eador_masters_of_the_broken_world]MotBW allow you to summon demons and undead. There is even a Necromancer subclass for Mage heroes.
