Rage of Mages 1&2. Great games. Baldur's Gate also had some overpowered summoning which was nerfed in 2.

Silverfall also has summoning, where you can call up an extra party-member entity (like an elemental or wild animal) with the right schools of magic.

I had a DOS 'Chaos' Homage / Clone and I think Lords of Chaos had a PC version too!
Archon 2 was, unlike the first one, summoning based not sure if there's a game mode in Archon Classic that's more similar to the 2nd one's gameplay
Technically anything Magic: The Gathering based!
